Caramel Rice Bubble Treat

Rice bubble slice is known by many different names: rice krispie treats, honey joys (although these are often made with corn flakes), rice bubble bars…..just a few I am aware of.

This timeless treat is popular with kids of all ages – I remember enjoying it when I was much younger (and I enjoyed it today too).  I have called it a treat rather than a slice as it does have a good amount of sugar in it.  I have used apple syrup in place of honey for a milder flavour.  The apple syrup blends beautifully with the caramel marshmallows.

Store layered in grease-proof paper, in an airtight container, then hide the container in a secluded corner of the pantry so that it lasts more than two hours.

Caramel Rice Bubble Treats

180g caramel swirl marshmallows
2 T butter
1 1/2 T apple syrup
3 1/2 cups rice bubbles

Place marshmallows, butter & apple syrup in a large saucepan over medium-lot heat.  Stir until the mixture has melted and combined together. 

Remove from heat and stir in the rice bubbles.

Woking quickly, press the mixture into a greased 20 x 20 cm cake tin, using the back of a wetted spoon to help squish the mixture evenly.

Leave to set overnight or chill for a least a couple of hours.

Cut the slice into four squares, then each square in half diagonally to get 8 large triangles.  Cut each triangle in half again for a smaller treat.
